Homemade Vegan Chocolate Recipe


This recipe was kindly shared to us by the amazing Hayley Carey. It's a perfect sweet treat that the kids will love and it's healthy which is a bonus!

Ingredients

  • 2 Tbsp goji berries

  • 4 Tbsp coconut oil, melted

  • 4 Tbsp cacao

  • 2 Tbsp maple syrup

  • 1 tsp vanilla extract

  • 2 Tbsp pistachios (or whatever nut is your favourite), chopped

  • Pinch of Himalayan pink salt


Alternative Filling Suggestions

  • Cacao nibs

  • Different selection of nuts (almonds work well)

  • Currants

  • Dates, chopped

  • Coconut flakes/shredded coconut

  • Frozen raspberries

Directions

  1. Place goji berries in a bowl and cover with hot water to soften

  2. After 2 minutes, drain

  3. Add all ingredients into a bowl and mix well

  4. Pour mixture into a small lined tray or container

  5. Hit tray on the bench a couple of times to ensure it is all evenly spread

  6. Place in the freezer for at least 20 minutes to solidify and ENJOY!
