Recipe: This Melonberry Chia Parfait Takes Your Chia Pudding To The Next Level
Whether you're feeling a little bit fancy, looking for a delicious brunch idea or perhaps a sweet treat to enjoy in the afternoon for when you're at home, this Melonberry Chia Parfait ticks all those boxes!
This month, the GMB team got creative with the Raw C Sparkling Coconut Water (which you'll find in the April GoodnessMe and Kids Boxes) to make a heavenly chia pudding with a pink twist. It's sweet, it's satisfying and it almost looks too pretty to eat!
RECIPE: MELONBERRY CHIA PARFAIT
DF: GF: RSF
1/2 cup Raw C Watermelon & Lime Sparkling Coconut Water
1/4 cup chia seeds
1/3 cup frozen berries
6 tbsp coconut yoghurt
3 tbsp almond milk
Add the frozen berries and Raw C Watermelon & Lime sparkling coconut water to a blender and blend until completely smooth.
In three separate bowls, create the following mixtures:
Bowl one: 3 tbsp coconut yogurt, 2 tbsp almond milk, a little dash of the blended mixture.
Bowl two: 2 tbsp coconut yogurt, 1 tbsp almond milk, 1/3 of the remaining blended mixture.
Bowl three: 1 tbsp coconut yoghurt, 2/3 of the remaining blended mixture.
You should now have three bowls: one very pink, one lighter pink and one very light pink!
Divide the chia seeds evenly between the three bowls, stir, and allow to sit in the fridge for 2-12 hours.
Once set, remove each bowl, give them another stir and then arrange in a parfait glass in layers, starting with the darkest pink and moving to the lightest.
Top with coconut shreds and sliced banana. Enjoy!
