My Day On A Plate: The Glow Seeker

Currently training with Julie Parker’s Beautiful You Coaching Academy, her passion is helping her clients shine a light into their darkness, and use that newfound wisdom to emerge with a strong sense of purpose and unbridled happiness about their lives. She began her spiritual and health journey when her father was diagnosed with cancer in 2012, and since then has been passionate about helping others discover what really makes them glow and supporting them in living a life they seriously love. Her one-line manifesto: I believe that love has the power to change the world, and that the shift must start within yourself.
Over the past few years, I’ve steadily turned into a morning person. The two hours I have before heading off to work are precious to me. It’s during this time that I carve out moments to reconnect with myself and nourish and move my body, often before sunrise.
The first place my feet take me when I step out of bed is the kitchen. I boil the kettle, grab a lemon and start rolling it with the palm of my hand to loosen up the juices. Once the water is boiled, I pour it into a big mug and allow it to cool (to avoid burning away the Vitamin C when I add lemon) while I grab my meditation stool, set my Insight Timer and focus on my breath for 5-10 minutes. It’s amazing how just a few minutes can completely transform your day – I’m more present, more aware, more calm.
Once the bell chimes, I get up and add the whole lemon to my warm water, which I sip as I potter around the kitchen, usually making a green juice for my partner and I. My juices usually look something like this:
- 3 stalks silver beet
- 2 stalks kale
- 1 handful spinach
- 2 stalks celery
- 1 lebanese cucumber
- 1 bunch mint/small piece of ginger
- 1 green apple
If I don’t have a coaching session with a client (or with my own life coach) at 7am, I’ll either go for a run or head to Flow Athletic for a Yoga or Strength class. I prefer to eat breakfast at home, but if there’s not enough time I’ll bring along a jar of yoghurt with frozen blueberries and muesli or prepare some avocado on wholemeal sourdough at the office. If I’m at home, I’ll make porridge with lots off cinnamon, home-made almond milk and a touch of Manuka Honey or enjoy 2 x boiled eggs with avocado and spinach on wholemeal sourdough or rye.
A soy cappuccino or dandelion tea sees me through to lunch.
This is often a massive homemade salad filled with organic produce I picked up at Rita’s Organics Paddington Market over the weekend. This week it was spinach, rocket, fennel, cucumber, strawberries, avocado, tuna and cottage cheese. Dressing is extra virgin olive oil, apple cider vinegar and dijon mustard
I’m currently obsessed with The Sticky fruit bars (featured in July’s GoodnessMe Box!) and Symington’s of Scotland dandelion herbal tea. If I’m hungry I help myself to a banana or mandarin from the office fruit bowl.
At the start of the week I usually roast a platter of vegetables with coconut oil for the week, either to pop on a lunch salad or pair with fish for dinner. This week I roasted sweet potato, carrots, fennel and red onion and enjoyed it with a ginger syrup & soy sauce marinated trout and black rice (my favourite!).
There’s always dessert! If I don’t have any Pana Chocolate on hand (my weakness) I’ll have some Jalna yoghurt with fresh or frozen berries.
Tea, tea, tea. I have at least two cups before bed. My favourites at the moment are T2 Lemongrass and Ginger or simply seeping fresh mint in hot water – so delicate and delicious!
