To assemble, cook the Morlife Quinoa Risotto with Roast Pumpkin as per packet instructions.
In a large bowl, place the mixed greens, roasted pumpkin, orange segments, corn, coriander, onion and The Happy Snack Company Roasted Fava Beans and mix through well. Add the avocado and tomato, and then set aside to prepare the dressing.
Take a blender and place the avocado, juiced orange, handful of coriander, rice malt syrup and pepper inside. Blend on high speed for a minute or two, until smooth, creamy and well combined.
To serve, plate up the salad, top with Morlife Quinoa Risotto with Roast Pumpkin and generously drizzle the creamy avocado dressing on top.
