This Zesty Salad Dressing recipe is perfect for a light but flavourful topping. Unlike store-bought salad dressings that use sub-par oils, this one uses extra virgin olive oil and Lemonade Rose kombucha. It's easy to make and is sure to be your go-to in the Summer time.
⅓ cup extra virgin olive oil
⅓ cup Nexba Lemonade Rose Kombucha
1 tbsp lemon juice
1 tsp grated ginger
½ tsp sea salt
1 tbsp maple syrup
¼ tsp cinnamon powder
2 large handfuls mixed spinach and rocket leaves
¼ red onion, thinly sliced
2 oranges, peeled and sliced
1 grapefruit, peeled and sliced
1 medium avocado, sliced
30g feta cheese, crumbled
1 tbsp black sesame seeds, to sprinkle
Kombucha dressing, too serve
To make the dressing combine all of the ingredients into a blender. Blend on high until smooth and creamy. Set aside
Arrange the spinach, rocket, orange, grapefruit avocado and feta on a large plate.
Drizzle with dressing and sprinkle with sesame seeds.
